While we take all precautions to ensure the production area is free of allergens (e.g. nuts), it is possible that traces can be present.
Cooked Chilli
Mazavaroo


Our first ever product and still a classic! This chilli paste is fried, giving a long-lasting heat.
Variants: We make "Rouge" (red) with bird's eye (and lots of garlic) or Carolina Reaper and "Jaune" (yellow) with Madame Jeanette or yellow Habanero (and some mustard).
Serving suggestion: This is a very flexible paste, you can have it on sandwiches, burgers, with any curry, eggs... And, of course, with cheese!
Instructions for care: After opening, store in the refrigerator. Always clean around the jar lip, use a clean spoon and top up with a protective layer of flavourless oil (e.g. sunflower). Looked after well, this product can last more than a year.
Fresh Chilli
Pima Crasé


These freshly-crushed chillies pack an immediate punch, bringing summer whatever the time of year!
Variants: We make "Rouge" (red) with red bird's eye (and lots of garlic), "Vert" (green) with green bird's eye (and apple and honey).
Serving suggestion: These go well on burgers, deep fried snacks, noodles... And, of course, with cheese!

This freshly-crushed chilli comes with mango... but don't let that fool you, Madame Jeanette (or Yellow Habanero) makes this one fierce!
Variants: We make this with a mix of red and green bird's eye and yellow chillies. The colour may vary between jars, but it's always the same great taste!
Serving suggestion: This goes well with fried chicken or fish... And, of course, with cheese!

We preserve lemons ourselves, to bring a unique tangy flavour to this freshly-crushed chilli.
Serving suggestion: This goes well with all types of seafood... And, perhaps, with cheese!

Sweet and Sour
Pima Tamarin

Tamarind is a typical African-Asian tree fruit with a delicious sweet and sour flavour. Paired with a powerful chilli like Naga Jolokia, this product brings tears of joy to the connoisseur!
Variants: We make this with Naga Jolokia, or Trinidad Scorpion when we can source it.
Serving suggestion: This goes excellently with barbecued meat and fried tofu and can be used as a marinade... And, of course, why not try it with cheese?!

Compote Tamarin is something completely different: a dessert syrup with a hint of chilli at the end. Sweet, tangy and dangerously delicious.
Serving suggestion: Apart from eating it straight from the jar, you can pour it (a bit like honey) over tropical fruit salad, pancakes or vanilla ice cream... And, of course, highly recommended with cheese!

Pickle
Achard Pima

A vibrant pickle made with chopped chillies and a traditional blend of spices.
Serving suggestion: This goes well with curry, in sandwiches... And with cheese!

Alcoholic
Rom Infusé

Mauritius is very proud of its rum and has come up with many ways to drink it! Infused rum is where the rum is flavoured with tropical fruits and left to mature for a short time. We add some chilli - of course - but it's not too spicy.
Variants: We make "Mangue, Passion ek Pima" with mango, passion fruit and red bird's eye chilli, and "Ananas, Vanille ek Pima" with pineapple, vanilla extract and red bird's eye chilli.
Serving suggestion: This is typically an after-dinner 'digestif' served cold or over ice (perhaps after you've finished that cheeseboard!). But don't let us stop you drinking it at other times...
Instructions for care: Don't shake the bottle and pour carefully (or through a sieve) to ensure a clean drink.
